From the Michelin-starred team behind Sushi by Scratch Restaurants, Pasta|Bar, and NADC Burger, Scratch Restaurants Group’s local Austin-based owners, husband-and-wife duo Chef Phillip Frankland Lee and Executive Pastry Chef Margarita Kallas-Lee, will open the group’s newest concept, Shokunin. Located next door to NADC Burger and in the same building as Pasta|Bar at 1009 East Sixth Street.

While Shokunin will offer a more casual experience than its sister concept, Sushi by Scratch Restaurants, the 20-seat sushi bar will uphold the same standards of fresh seafood and Japanese ingredients, which will be shipped weekly from Tokyo’s Toyosu Fish Market, the same purveyor used by its sister restaurant. Guests will use a retro tick-box style order sheet and pencil to choose from a rotating selection of fish, indicating whether they prefer nigiri, sashimi or hand rolls. Unlike similar casual sushi spots, Shokunin will not serve cooked dishes, such as teriyaki, noodles, or tempura; it will only serve sushi. After submitting their sheets, guests will be able to reorder in a straightforward, no-frills format designed to encourage multiple rounds. A full beverage menu featuring beer, sake, and select wines will also be available.
